The course I did was with Cheesemakers an local Brisbane company www.cheesemaking.com.au.. This company is located in Brisbane, Queensland, Australia.
Graham Redhead conducted the course. It was great. Lots of hands on work right from the start. We made 8 different types of cheese over the 2 days and were able to take them home with us. What else can I say but if you get the chance to do the course.... do it.

The course content was as follows:

Theory of Cheesemaking
Theory of Cheesemaking
Cheddar
Camembert
Whole Milk Ricotta
Fresh Acid Curd and Quark
Fetta
Mozzarella
Whey Ricotta
Starter preparation, preparation of brines.
Storing and ripening your cheese at home

Glenn, much appreciate the info, long way for me in Houston for a course :).

One day when I retire I think I'd like to teach a similar course so thanks for the ideas (nobody laugh too hard).

I've also just updated the Cheese Courses webpage for other members and visitors.

Just for clarity, their website says they are based in Little River, Victoria State?

Glenn, Thansk for the info and link.  Like John that would be a pretty ambitious trek for a cheesemaking course.  I don't suppose they gave you any course materials that could be shared with the group here? (literature, guides, etc.)

I think you are confusing cheeselinks with cheesemakers. I believe cheese links is Victoria and Cheesemakers is Queensland.
