Just got my cheese out of the press and here's a photo. It's looking good.

Yeah I know. Not sure how I'm going to do it properly. Still I'm sure there's lot of advice on this forum. By the way it weighs 2.5 lbs not bad from just under 2 gallons.  :)

Not to worry! You got a good yield on the cheese - good milk and good process. Do you have a place to age it?

I could use a secure outbuilding I have but the tempature does vary a lot(summer to winter). There is a beer fridge in there but I feel that would be to cold. So all suggestions are welcome.

You could add a temperature control wire into an outlet, you can pick one up at an A/C supply place or online. It's not hard to do and it controls the temp very well

Not a bad idea, I'll look into it. I'll see what other options there are as well, maybe someone I know has a fridge they're not using. I may be changing my fridge in a couple of months when I have a new kitchen built. Just agreed a price for it today. So I'm sure I can sort something out.
