Citric Acid Mozz success with P/H milk

Hi Karen,

Yes, I'm very pleased too!  My brother in law said it was my best cheese yet (mozzerella is his favorite, and he said this was really good), so I'm very happy with that report.  I suspect if I had better gloves that would allow me to tolerate the heat a bit better then it would have stretched much better.  It seemed very close.  Anyway, it was the best result I've had for making mozz yet.  Thanks again for posting this.  A cheese to you.

I sometimes put the curd into a glass bowl and ladle hot whey over it, then use a couple of wooden spoons to pick it up and stretch it around.  Also, I will wear two pair of exam gloves and keep a pan or sink full of ice water - dipping my hands frequently.

Hi Karen,

The wooden spoons would have been a good solution.  Still, I think I'll pick up some large sized heavy gloves - and keep a spare bowl of ice water at the ready!

They sell these thick gloves in the soap section of most stores for like doing dishes of something that work well for stretching mozzarella.They are very thick.

Yah, that's what I was thinking of getting. 

We used some of the mozz last night in a pasta and lamb dish.  Was really good!
