Thanks, Debi. I have a really good feeling about this company. They have shown me incredible personal integrity which you can bet carries over into their cheesemaking.  I've remarked that on a few occasions to different folks because I really respect them in this short time that I've been acquainted with them. First day is on the 22nd!
