Greetings from Beautiful Plant City Florida: Winter Strawberry Capital of the world.

I have been crawling around this board since February 22, 2012 and must say that this is the best source of cheese making information bar none.  It can be overwhelming but when properly sifted, the grains of wisdom are easily rendered from the chafe and noise.

Well despite most published advise to the contrary I have jumped head first into the semi hard cheeses and skipped the soft fresh and pasta filata stages recommended for novice such as myself although I have now backtracked and had the pleasure to stretch some Mozz and salvaged some pretty good Riccotta from Whey.  The verdict is still out on my wheeled makes since I have yet to crack the first of my makes having used local raw milk which I understand is best aged two months minimum.

We shall see but they sure look and smell divine.  I hand vacuum packed my first Gouda after some cracks developed in the edges of the waxed wheel until able to re-wax and the moisture left in the bag gave off the best smelling Gouda aroma I have ever inhaled.  I am an obsessive note taker so upon determining success it will be a pleasure to post my make notes for whatever it is worth.
