Hi! New here from Minnesota

Hi!  My name is Tracy and I am in the middle of nowhere in Minnesota!  Really, it feels like I am surrounded by trees and swamp.   :o  I have to drive about 40 minutes to a movie theater with more than one movie and about 90 minutes into Minneapolis.  But I know all my neighbors and don't have to worry about not locking things up.  And at night, the windows can be open to listen to the coyotes yipping in the distance.  Spooky but kind of relaxing too.

I have Great Pyrenees dogs so the coyotes never get close!

I raise numerous critters and milk several goats and a few cows.  We use mostly raw milk and have had pretty good success with the cheese making so far.  I have made tons of soft cheeses and now want to start on the aged ones.  Have a press and want to get the cheese cave built!

I hope to meet many of you on this board and learn how to make so many of these delicious cheeses!

Welcome, Tracy!  I grew up in Albert Lea - it sounds like you are probably farther north, maybe west of the Twin Cities?  I now live near Menomonie, WI, so only about an hour from the east suburbs.

It sounds like you have lots of good milk to make cheese with.  It is an awesome adventure.  I look forward to getting to know you better.
