Artisian cheesemakers in Malta?

Hi, Im heading over there for vecation next month and Im looking to learn about the production of their "Gibniet" cheese.  Idealy from a small producer rather in their single large scale producer.

Google couldnt assist me and I'd rather plan ahead, rather then ask around once Im there - as I'm dependant on public transportation.
