I would like to make a cheddar that is along the lines of an aged english, irish, welsh type cheese that has that sharp rich flavor such as the Coastal brand. There are some Irish cheeses which I have bought from Sam's which are very good.
Does anyone have recipes or suggestions on how I can get there?
