Title: First Hard Cheese (pepper jack)

I made my first hard cheese this weekend, a pepper jack, following the recipe from Scasnerkay at https://cheeseforum.org/forum/index.php/topic,9916.0.html (https://cheeseforum.org/forum/index.php/topic,9916.0.html).  It's drying now to wax, since I have some and don't want to lose any to rind, and I'll have pictures soon.  Other than a little first-time press trouble, it went surprisingly well.

Grats!  Can't wait to see peecshures!

I want to make a Monterrey Jack one of these days....so many cheeses, so little time. Monterrey Jack is one of my favorite all-round cheeses.
