I'm thinking of taking a professiona cheesemaking course in march at CalPoly here in California, but it's $600.

I saw this before I was thinking of taking it but it's so expensive. They have conferences up here is SF a few times a year.

What would be worthwhile is if people wanting to go pay for a small amount of the attendee's fee and then the attendee publishes all notes to those paying, as well as taking questions from those paying. It does sound very interesting. Every aspect of that course makes me curious and I don't find the price bad in any way for a high octane primer on cheesemaking and business.
There is a short article on this course in this month's (Nov/Dec 2009) Dairy Goat Journal. Might be worth a read for anyone interested.
