Title: sharp cheddar flavor

ok, I've been making goat milk cheddar with meso MA culture. It's ok, but not that sharp flavor that I want. What culture should I use to get a sharp flavor, and where can I get it?

Virginia, how long are you aging you cheddars for?  Most of the sharpness will only come with time.
