I really want to learn how to make cheese. Does anyone in NC, Raleigh area, know of local classes?

Hello... I'm a "Noob" cheese maker also ...found that this site is very helpful New England Cheese making (http://www.cheesemaking.com/) Still working on my cheese press and will try their "Raw Cheddar" as soon as possible... Regards Fred
