Hi, I am from Campinas, São Paulo state, Brazil.
In the beginning of this year I bought 10 pregnant Lacaune ewes and from June to October 2013 I made some sheep cheese: Feta, Boursin and most of them Manchego.
The new milking season will start next February and I am reading as much as possible in the forum to learn more about cheesemaking.
I am expecting to try new sheep cheese recipes during this new milking season.

Welcome! One of my favorite goudas is made with sheep's milk. It makes for a very flavorful hard cheese, but the fat content is higher than both cow's and goat's milk. 7.4%
