Very interesting, thanks for posting that John.  At the end, she mentions that it is not suitable to use for cooking.  Is their a cream cheese that can be made for cooking?  Or are most of the recipes for spreading on your bagels and the like?

Roo, she says at end of video that not good for cooking as softer, presumably than store bought Cream Cheese.

I don't think thats an issue, it's perfectly good for cooking in food like Cheese Cake.

There are a number of cream cheese recipes posted here, and also a couple of recipes that have been made with the resulting cheese.  So far, apart from curdling if I over work the cheese, I have had great success with this cheese.
