Title: G'day curd nerds

Hi all,

Been lurking a little while thought i'd take the plunge and join up and say g'day.

I've been attempting to make cheese at home for a only a few months. it all started when i saw a demonstration on fathers day where a guy made some milk Ricotta. he said making haloumi is not that much more difficult.  That pricked my ears up as i love haloumi. and so i began my foray into cheese making.

I've had 3 attempts at feta got it servable on the third attempt. made some haloumi (it all went on the first night).  and right now i'm attempting to make a cam. (about 2 days in).

I live in the Illawarra region of NSW, australia. we even have our own breed of cow! http://www.ansi.okstate.edu/breeds/cattle/illawarra/ (http://www.ansi.okstate.edu/breeds/cattle/illawarra/) . sadly now its mostly houses where cows once grazed. and those that remain are not Illawarra's

My first three batches of cams came out great. I'm not game to make another in case they were flukes.  ;D
