Title: Storage of store-bought gouda, how long?

I am sure this has been asked.  I just can't seem to find it.  Store bought cheese stuck in a refrigerator, provide it hasn't been opened, would keep for how long?  And how does this compare to a similar homemade cheese kept in the same type of environment?

Any store bought cheese we get and don't use up right away will get vacuum bagged,
I have had some for over a year in the bottom of the fridge, we think it just gets better, including our homemade cheeses.

"keep" meaning what? While maintaining the same flavor/texture? Cheese is rotten milk, it's already spoiled. It should last and be safe to eat forever, but the flavor and texture will change over time.
