Well, here's my first Cheddar, done up with one of Bob's wonderful Dutch presses, and aged for 90 days. Pulled it, tried it, everybody loved it, then sent 3/4 of the round back to the cave for more age.

Nicely done! A cheese to you. Cheddar continues to improve, so lose 1/2 that wheel until Christmas time. You'll be pleased you did.
