Title: My first Colby failed

After 6 months of aging,  I find my Colby has failed. It's crumbly and bitter in taste. Back to the recipe book.

Worry not GlennK. Colby just doesn't age very well past 90 days. Care to share your notes? There might be something else that made it bitter.

Eric,  I also sampled it at 90 days and it was the same as it is now. I thought I would go longer to see what happened.

My notes aren't handy, but I see two problems with may make; I used 1/2 tab of rennet instead of a 1/4. Plus It got to temperature fasted than planned because I can't control the water bath temperature that well yet.
