Nice blog you have in your signature, I see you've made several different cheeses including blue, cheddar and Port brined, congrats!

I think you are the third from Oregon and there is a Geographic > USA > Oregon Board (https://cheeseforum.org/forum/index.php/board,86.0.html) in case you wanted to post anything local.

Thanks John, I'll check that out as well.  The name came from my favorite line in a Fish Called Wanda ("This isn't any old cheap Chinese panda, this one was hand made in Belgium!"), and I now have ~20 different cheeses in my cave.  Most of them are variations on pressed jack/cheddar since I'm working on one or two variables at a time, but yes I do have a blue, swiss, and several liquor brined as well.

Hello and welcome Panda,
What booze have you brined with other than wine?  I have a friend that has used brandy but I cant bring myself to  use my coffee sweetener for cheese :D
