A South Australian company is embarking on a brave new world when it comes to making cheese.

Udder Delights, based in the Adelaide Hills, has been given the green light to produce Australia's first raw milk blue vein cheese.

Named 'King Saul', the cheese sells for $300 a kilogram and will be released in limited batches each year.

The launch follows two years of intensive research, testing and trial and error by the company to make the vision a reality.

Master cheese maker Saul Sullivan says he's thrilled the moment has finally arrived, after they finally received regulatory approval on Friday.
