I have made a batch of coldy cheese using meso. Ma001 culture it taste sour but is supposed to age for at least 5 months is it normal to taste sour when its young?
KL, welcome to the forum. Can you give us more information about the make you used, and when you have sampled it and gotten the sour taste?
I used store bought pasteurize milk single strength animal rennet mesophilic ma 001 starter culture I added calcium chloride and the rest I follow the recipe it has been about three and a half weeks when I decided to try it the anticipation was killing me.
