Hello from Ukraine, friends-cheesemakers.

Can you help me with my Gouda?
It's has been made by original recipe, but I see this shocking result after pressing it.
This cheesehead is 3 pounds. As you can see, I have clothing scratches all over top of cheesehead and ideal bottom side.
What I need to do to chenge this situation?

Hi there,

Usually you can remove the marks from the cheesecloth by doing a short last press witout cheesecloth. I would turn the cheese so that the marks is in the bottom of the form.

Maybe some of the older cheeses in here have other ideas but I just wanted to answer quickly.

I ditto Danbo :).  Kadova brand gouda molds have a formed mesh that eliminates the need for cheesecloth - more expensive but IMO well worth the premium.
