I made two Hispanicos this weekend. I use moulds with removable pattern strips inside. The pattern starts 5 cm down on the strip to make it easier to put in the follower. Unfortunately I put them in upside down - in both moulds...

The result is two cheeses that look a little special... Well they are home made - and the probably taste the same... ;-)

I actually sell them if you are interested...

I have a couple myself that I don't use that often. They are very sturdy and practically unbreakable. Some of them are microperforated and doesn't require a cheese cloth.

When I turn the cheeses during pressing I simply turn the moulds without redressing.

Hate to think what shipping would be dfrom Denmark to Washington State.  May have to look for a local source! LOL

I can see that you are right. He's website is: atisangeek.com - great website by the way! :-)

He sells a 1500 g Manchego mould for USD 64,99. I sell it for USD 39,00 (DKK 255) - shipping to Canada from Denmark would be around USD 31. I don't know what the shipping by Artisangeek would be and I don't know if there would be any customs fees - so maybe that is why Artisangeek's price are higher (import from Spain).

The moulds from Artisangeek.com looks just as sturdy as mine and I know that he has a high degree of service! I don't think he is in this hobby to make a great profit and he has a lot of other goodies on his site (for example great descriptions of different cultures). :-)

Sorry if this smelled like advertizing but I really like his site and there is nothing in it for me.

Yeah, just checked the Cheese Connection (http://stores.cheeseconnection.net/manchego-mold-and-follower-lid-with-beautiful-weave-pattern-in-mold/) in Seattle and they have the $65.00 one for $28.75 USD and are about ten miles from me.  Out of stock right now but I can call them and find out when they will be in.  Don't think I would need the larger one and really not interested enough to pay that much for the 8-9 pound mold. ???  Talked to the cheese connection today and they will have these in stock in March. ;D

I wish we had a similar shop near where I live. It's heaven for a cheese nerd. :-)

An 8-9 pound mould - I would call that ambitious. ;-)
