Oo, that looks like it'll be interesting. How long you planning to age it? Have a cheese.
I guess 3-4 months. It's a bit like a Cheddar but more moist and therefore ripens quicker.
I'm not sure that a sage-cheese will actually be one of my favorites but it was fun to make and it looks nice.
