Title: Is anyone here a Dairy Processor?

It seems like most of the folks on here are cheesemakers as a hobby, which is pretty stinkin awesome.

But is anyone on here employed in the dairy industry, local or national?

I am a cheesemaker, operating my own small business. I am building up to a proction of 8 to 12 tons annually.

So I guess I count.

My background is in Swiss Alpine cheese, having been taught in that tradition.

And I am on the opposite end, I have a small goat dairy. We sell raw milk and fresh and raw goat cheese. i make my cheese in 20 gallon batches or smaller. I sell at local farmer's markets, some local restaurants and here on the farm.

I milk anywhere from 8 to 15 jersey cows every day. We make yogurt and sell raw milk- and I make cheese also. 50 gallon batches three times a week :)

I'm hoping to be licensed this year - have cows but not yet finished with the processing facilities.
