Title: Two new cheddars

Hello friends,

Wanted to share a pic of two more cheeses.   One on the left was made on Sunday and the other is 9 days old.  I will be wrapping the 9 day old today.

My wife thinks I'm crazy taking pictures of cheese and posting them.

Oh they do look good...  Making another myself this weekend as I need to keep my rotational stocks up.  I try and make one every 6 weeks - I say try as there are more cheeses I like to make as well.

And you age them to 9 months? How much cave space d'ye have?

My guess is she's jealous about the cheeses you get (including one from me for your twins).  Best keep it to yourself ;).

I have been making a cheese every week for the last three weeks.  1st cheese is clothbound and will be aged for a year.  2nd will be clothbound and aged for 6th months.  The 3rd is going to be vacuumed sealed and aged for 3 months.  This will be given to the farm that gives me my milk.  It's the least I could do because they don't charge me for milk.  I will be making another one this weekend and age that one for a year.   I have had very good success with clothbound cheddar aged for a year.  It taste so good.  I just finished eating all that I had.  Now I have to wait a year.  Next year I will have a better supply.

Regarding my cave.  I have an old refrigerator that I converted.  It will hold plenty of stock.  I'm no where close to filling it.  It has both an electric themostat and humidity controller.  It holds at 54 degrees and 85% humidity.

You get free milk straight from the farm??? We now all hate you! :)

But seriously, those cheddars look great, with a wonderful knit. (I have not yet succeeded in getting a really good knit on my cheddars.)
