And possibly my first successful cheese! After a few failed attempts at the 30 minute mozzarella, I wanted to try something else. This seemed like a simple recipe.
I enjoyed making this one. I enjoyed the mozzarella too, but this seems like a success. I added Spinach and Herb dip mix from Tastefully Simple. I just wanted to see how it would turn out.
I haven't tried it yet. I'm waiting for the wife to get home with some crackers. And I'm a little scared to try it. ;D

Ohhhh yeah you have to add salt. To cheese. It's a must.
I added some. Maybe 2 tsp. Clearly wasn't enough.

Trey, it may be cheese-making heresy, but I would say it is not too late to increase the salt content. Soak it in brine for a few hours, wait 2-3 days for it to even out, and there you go. You could even dry-salt, followed by the wait. I did the latter with a Lancashire that I failed to get enough salt in, and was able to improve the cheese markedly -- and that cheese was already 6 weeks old. :)
