Title: My first Colby!!

This is my first Colby cheese I've made.  So far it seems to have turned out!  Can't wait to try it.

I used the recipe from this cheese site:

I pretty much followed it to the T as I am new at cheesemaking. 
However, I did accidentally add too much weight to my press early on in the pressing but it wasn't on there very long and I corrected the problem. 
I hope it did not mess up the cheese in some way.

I plan to age it for 1 to 2 months.

I just love doing this cheese making thing!!!

Shouldn't have made a difference as long as the whey you were getting was still clear. The danger with putting heavy weight on early is either squeezing fat out of the cheese or compressing the outside and trapping moisture inside. But you should be fine.
