Title: Packaging for Feta

We've got a small cheese making facility, and we normally do hard, aged cheeses. However, we just finished a batch of feta and are now considering our packaging options. Most store bought feta comes in plastic tubs with a bit of brine - is there any reason we couldn't cut and wrap it in plastic wrap like we do our other cheeses? Our feta has been brined for 60 days, as it's a raw milk cheese, so the salt and pH levels should have stabilized many weeks ago.

It keeps better in brine, I think.
