Made this using 2 G whole milk and Caldwell recipe. Washed with 3% brine + linens + a few drops annato.
Really creamy, slightly stinky, beefy and complex. Delicious!

I've been looking for a qualifier for that taste, when it tastes like a cow. You describe it as beefy? Mine looks like yours too in a smaller version. Thanks for posting.

Yeah "beefy" or "umami" maybe...
umami and beefy... My cheese tasted like a cow smell. So your beefy would not really be my "taste like a cow" is your beefy is umami.
