Can anyone tell me , or direct me to fat contents of different types, soft vs hard , cheese?

Fat in artisan cheese is not generally standardized. It depends on the milk, which varies considerably, and the style of whoever is making the cheese.

I second Sailor. And when all the fat in there intact, you will get more aroma compounds to work with.

Yea, I was just trying to figure in general which had more fat.
The fresh soft cheese seems to be generally higher in fat. Guess that makes sense, The longer they are pressed and dried the less fat.
