Any recommendation to where I can send my 25 year old son to learn the basics of cheese making. I hear Vermont is the best place. Any suggestion.

I'd look for internship opportunities and figure it out from there based off what seems to be the best fit.

We live in the Caribbean, the Dominican Republic and in Miami. He is looking to learn more about making cheese.

I think,there are great cheese makers all,across the USA , so I would suggest to look up different makers and contact them about working there .

Also your son could start with  working in a cheese retailer to get to know more,about cheese in general and also to make contacts with makers as any good cheese shop,will have relationships with many of the best makers . This will allow the  cheese  retailer to see his work ethic and put in a good word for him.
