Title: Can you store milk out of the fridge the day before cheese making

Hi there fellow cheese heads. I brought 7.5 litres of unhomogenised milk tonight to make a blue cheese with tomorrow morning.
I was just wondering if it's okay to leave it out on the bench overnight in the garage which will get down to around 10C?
I don't see the point in keeping it in the fridge just to warm it back up to 32C tomorrow morning.

Warm it up from fridge temp. Safer. Fewer things can harm it or start working in it to create off flavors. See this (https://cheeseforum.org/forum/index.php/topic,13763.0.html) topic and the last comment.

Ahhhh.  Ok yes that makes sense.  Lucky I left it in the fridge last night then..lol
