Hi, I am very new in this area. I remember eating some sort of cheese it was yellowish, sweet and salty but I don't know what kind of cheese it is. Now I am trying to find it. I tried cheddar as well as some other popular kinds like swiss, jack, colby, etc but they all seem to taste bitter.
Can someone introduce to me a kind of cheese that doesn't taste bitter =.=

Good quality cheese shouldn't taste bitter.
I wonder if you had some sort of higher quality artisan type cheese , they tend to have a much more full flavor profile and many makers are able to bring out flavors that commercial manufactures can not.
And yes a cheese should not be bitter , I wonder if you are meaning "sharp " as sweet is usually not also sharp .
The best way to find a cheese you like is to go to the nearest cheese monger and try some , tell them you would like to try salty sweet cheeses . When you find one you like have them cut some for sale then move on to others for tasting .
If you are buying at least some of the ones you like as as you go , you can taste 20 cheese or more and no one will be bothered .
When I go to get cheese even if I know what I want I space out the ones I want in between sampling of ones I have never tried , and if I like them I buy , or buy next time.
i suspect you will find many cheeses that you love.
