I am from Michigan where I have Jersey cows. I joined here to help lower my families food budget when we eat a lot of cheese and lots of extra milk! she doesnt calve for another 5 weeks but this isnt her first calf so i know what it feels like to be swamped in milk :) I hope to learn many new recipes so I am not stuck making 2-3 lbs of mozzerella every day lol

Welcome, a good group here.  Cheese making is a really good way to "dry" milk out for storage, it's classical purpose,, and the results can be very enjoyable.
