but they are for 100 gal batches and seem pretty complicated. Does anyone have a simpler recipe for Caerphilly cheese?

Yep, Tea in Queensland posted a Caerphilly Recipe and her results here (https://cheeseforum.org/forum/index.php/topic,238.0.html).
I often use Peter Dixons recipes. None have failed me yet!
