Hello

I am here to learn how to make various Italian cheeses. More specifically right now Im looking to make Mozzarella. Authentic Old World Mozzarella. I realize milk options are limited to cows milk for most of us in the US but Id like to get as close as possible. I almost forgot If those of you reading this could please point me to a starting point on the forum that would be great. There is a LOT of information on here and I'm looking forward to being.

Gino, welcome to the forum. Do you have any experience making other kinds of cheeses, or a beginner with cheesemaking in general?

If you do a search for mozzarella, you should find a number of posts. I'll warn you that most of them will discuss the difficulties of this cheese -- it turns out to be a much harder cheese to make successfully than many others. Thus, most of us do not recommend this as a cheese for beginners. :( That said, you will also find success stories, complete with recipes! :)

welcome to the forum!
I also started with mozzarella and a lot of difficulty. With me, it came down to the milk used, and since I have found a raw milk source, I have had no problems making it (using the citric acid/microwave method based on http://www.cheesemaking.com/howtomakemozzarellacheese.html (http://www.cheesemaking.com/howtomakemozzarellacheese.html)).  Just ask if you have any questions  :D
