Hi all, I did a 8lb spiced Gouda a week ago and was thinking of doing a Gewürztraminer washed rind do you think it would complement or clash.

Good question. I think it comes down to whether the cheese spices will clash with the spicy tasting Gewürztraminer. What were the spices in the cheese?

My thoughts exactly Kern it is a traditional spiced Gouda spiced with cumin. My brain is having a hard time putting the cumin and Gewurztraminer flavours together.
A little mold decided to show up so I started the wash. Will probably wash for a couple of weeks then vacuum seal should be interesting.
