Title: Waxing a cheese
Post by: adalton72 on January 27, 2016, 03:35:21 PM
Hello, I am looking at waxing a cheese for the aging process. I thought I read about a product that is put on the cheese before waxing. I buy basic stuff from Danlac of Canada. Can you tell me what I may need if making a gouda or Colby from them.

Thank you

Andy

I wax many of my cheeses and I've never put anything special in them to do this.  All waxing is doing is preventing the air from getting to the cheese the same as vacuum bagging.

The "pre-waxing" product you are thinking of is a polymer coating called Paracoat.  You can read about it here. (http://www.cheeseconnection.net/product/csk-paracoat-cheese-protectant)
