Title: Vat Question

 I was wondering if a commercial broaster would work as a cheese vat? I am completely new at wanting to make cheese and I am collecting all the equipment to set up my cheese room.  Yesterday I was given a fat tender model 711 by the Broaster Company.  Any information would be great. I also have no idea about this but I think there are two questions which will be important:
1. Is the capacity what you want?
2. Will you have the temperature control necessary for making cheese?
The second is likely to be the sticking point. I gather that this is a device designed for roasting chicken. In that case you may well find that temperature contol is difficult.

If this is what you are referring to it looks like there is only a off on switch, As Raw Prawn said you may be able to wire in a temperature controller but you need good control and a range of temperature depending on the type of cheeses you are making.

There is a third issue: is it stainless steel, or aluminum? If the latter, you probably will not like the flavor of the cheese that comes out of it ...
