Let's see, I think it has been like 15 months since my last Caerphilly, WOW?
So I tried my hand at it again.
Not many pictures, everything just went bang, bang, bang.
This one seemed too dry, and it was so we through a bunch of weight at it to get it to knit.
It still got some cracks on top and bottom,
It will probably go into the bag as soon as the rind has aired/dried out a touch.
I'm thinkin this morning.

Cool! I'm going to do some bloomies soon. I ordered a small 1.7 cu ft fridge to set on top of my cheese cave to age them in. It also has a small freezer so I can store my supplies in it. ;D have to see if I can age mine as well as Mal does his. :o
you may be able to see that my temps went as planned, hydration,mixing, and cutting went well.
Then the curd fractured.
draining was good, the curd seemed to be drier than I prefer at that point I knew there was going to be a problem with pressing.
there was, after the first press I thought it was going to fall apart, I had the same fear as pressing continued soooooo it got massive weight thrown on it (5 gallons of water and 60 lbs of other weight)
my poor little press creaked all night and I still couldn't get the cracks out of it even after pressing nude. umm, without cheese cloth.
the rind today seems dry enough to go ahead and vacuum bag and through it in the cave for a month.
It was a kick to make cheese again.
