It feels like I've been away far too long.. But, today is Colby day.. It's raining and the planned BBQ (real BBQ - not frying a snags or chops) has been postponed until next weekend. So, flipped the schedules around and Colby it is. I did a Colby late last year and just opened it up and although to wasn't a great cheese - it certainly melts well and eats nicely on crackers. The fault was the wash temperature was not low enough and the middle sort of went a bit crumbly. I'll post photos of the previous cheese and todays control sheet as the day goes on.... It's nice to be back.

A snag is a tube of indeterminate contents but often containing offal, fat, flour, sawdust and, occasionally, meat. There are many other possible contents but then there are some things it is better not to know about. It is traditionally cooked on a barbecue and may be eaten in some circumstances depending on the (a)confidence, (b)hunger, (c)desperation or (d)inebriation of the consumer.
Alternatively, it may be fed to the dog.
In some parts of the world it is referred to as a sausage.

Two more next week I can cut and package my Big Easy Blue. Then I'm cleaning out the cave and doing one of your cheddars and a bunch of other stuff. Need some bloomies and maybe another Vacherin Mont D'Or attempt. Got to fill the cave back up and I just can't do that with a blue in there. :'(
