Title: My 2 day old cheddar cheese smells sour? Is this a bad sign?
Post by: stemo on March 19, 2016, 08:56:35 PM
Hi! I am making Cheddar for the first time and followed the process correctly. When removing it from the mould after pressing it had a strong sour off milk smell. I'm concerned this is a bad sign as i've not smelt this when making other aged cheeses like gruyere. Any help would be very much appreciated.

Thanks so much.

Stephen

Hi Stemo, maybe you can elaborate a little about the recipe you are using.
