I recently moved to a new apartment and got a computer so I thought it would be time to post and document some cheese.
I decided to try making a Colby cheese. A coworker of mine really likes Colby so he convinced me to try it out. I decided to stick to Gavin Webber's recipe for Colby from his book. I really want to get a pH meter soon so I can be more precise with what I'm doing. Especially since this time around, I don't think I added enough rennet. I had misplaced my glasses when I was filling up the teaspoon. Because of that, I had to wait an extra twenty minutes to get a clean break.
I'm not sure if I can/should post the recipe since I paid for his book, but I do have some pictures in the meantime.

My press always goes a little lopsided, but I think this one turned out okay enough. I'm excited to taste it in a few months!

Nice cheese! How long do you plan to age it?
I'll probably go for 2.5-3 months. I decided to make a Colby because a friend of mine who is graduating in December told me that's his favourite cheese. (And dropped several not so subtle hints that I should make some Colby).
I hope to give it to him then before he leaves town at the end of the year.

Colby tastes great and I made sure to re-wax half of it and put it back in the cave (if for no other reason than to make sure I don't eat all of it).
I plan on surprising my parents with some of it this weekend when I go see them. They don't know that I've been making cheese yet and my dad's pepper jack won't be ready till Christmas. But both my parents enjoy Colby so I'm excited to see their reactions.
