Title: Blueberries in Cotswald
Post by: ilovetodig on October 21, 2016, 12:39:33 AM
I recently made a Cotswald cheese from a recipe I found here that had dried chives and onions in it and was wondering if anyone had tried dried fruit, specifically blueberries or cranberries in that cheese.  Also, my Jersey's milk is presently  1/2 or more cream and I don't know whether to use it that way or take some of the cream off of it for hard cheeses such as cheddar, gouda, etc.

Our cheese is made with fresh Jersey milk, I make cheese with the milk as it comes from the cow. Unless you want to make butter, leave the cream in, I'd say.
