Title: Sanitizing a cave
Post by: Martin on December 01, 2016, 06:02:12 AM
I recently acquired a second cave, I use wine fridges. Used the first one for quick blue cheeses for several years. This cheese takes two weeks in the cave with no blue showing on the rind. I scrubbed that fridge thrice with btf, vinegar and soap/water. I also scrub my cheese boxes after each use. I put a cheddar into the old blue cave, and lo and behold, it is growing blue mold. Now I am wondering if there is any way that I'll ever be able to use it for anything but blue cheeses?

I mix a cup of chlorine bleach with a half gallon of water and use that.  Comes pretty close but you have to put it into a spray bottle so it gets everywhere.
