I am just getting started and am very interested in making my own cheese. will probably be asking a lot of newbie questions that have been asked hundreds of times before.

nor to worry JP. That is what this place is about. You will find plenty of folks willing to lend an ear to stories of cheese making, and they will share theirs as well. Polk around in the library board for a while as there is a lot of information posted there. Your best bet would be to start with the soft cheeses as they will give you more instant gratification for your efforts. They also require minimal equipment. Have fun  ;D

Howdy JP & welcome few members here in Texas . . . FYI, there's a Sticky Post here (https://cheeseforum.org/forum/index.php/topic,582.0.html) on cheese making for newbies that a few of us put together.
