Title: Fruityness in cheese (without adding fruit)

I have tasted cheeses, as well as seen others describe the flavor of some cheeses, that taste "fruity". What contributes to this unique characteristic?

The short answer is that esters formed during the aging process are what can give a fruity flavor to cheese. That being said, cheese aging is extremely complex and there are many factors involved.
