Title: Good Blue Gouda Recipe?

Hello,

I've been looking into making a Blue Gouda. I found Tim Smith's recipe but I'm not all that Jazzed about it. I was wondering if there's anyone out there who has a recipe that they like or if not - some rules of thumb for adding PR to any cheese like salt percentages, etc.
