Title: Smell..
Post by: tobyw on November 16, 2017, 10:36:13 PM
Hi all - how should my Munster really smell?

I am always reading about 'stinky' washed rind cheeses. But the smell is always described as being 'stinky feet' which is not really that awful a smell in my book. Quite a mild smell really.

However, my first Munster is ripening away in the cave, and has taken on a smell which is...how can I put it nicely? Rotting flesh? Definitely not really just smelly socks.

Just wondering what other people think the smell of a Munster should be? Sweaty feet? Or rotting flesh?

If your Muenster has a nice sticky coating of geotrichum, orange pastie stuff, over it then the odor you describe is just about right! ;)  Here's a shot of the one I did.  Very stinky!!
